Zucchini Bread

This is my mom’s recipe. Where she got it? Who knows. Sure makes the house smell wonderful while it’s baking!

Zucchini Bread

Servings: 2 loaf pans

Ingredients Method

Ingredients

  

• 2 teaspoons vanilla extract
• 3 eggs
• 1 cup vegetable oil
• 2 cups uncooked zucchini, shredded & drained
• 1 & 3/4 cups sugar
• 1/4 teaspoon baking powder
• 2 teaspoons baking soda
• 2 teaspoons cinnamon
• 1 teaspoon salt
• 1 cup chopped nuts, optional
• 2 cups flour
• 2 loaf pans & cooking spray (like Pam)

Method

 

1. oven at 350°
2. In a large bowl combine: vanilla, eggs, oil & zucchini.
3. Add remaining ingredients.
4. Spray loaf pan bottoms with cooking spray.
5. Pour batter evenly in the 2 loaf pans & bake for 1 hour.
