Ham and Bean Soup

Ingredients
  

  • 2 tablespoons Olive Oil
  • 1 Onion, diced
  • 1 large Carrot, sliced
  • 1/2 cup Celery, finely chopped
  • 4 cloves Garlic, minced
  • 2 cups cooked Ham, shredded
  • 4 cups (32-oz) Chicken Stock or Broth *Low Sodium*
  • 2 Bay Leaves
  • 1-2 tablespoons Parsley
  • 4 15-oz cans White Beans (keep the liquid)
  • 1/2 teaspoon Black Pepper
  • Salt to taste, IF needed

Method
 

  1. In a large pot, heat oil. Add onion, carrot and celery. Cook 5 minutes. Add garlic and ham. Pour in chicken stock, bay leaves and parsley. Add beans and liquid from cans. Add pepper. Simmer until heated through. Add salt if needed.

Notes

It’s a bit salty for our liking.  I would suggest using a low sodium broth or stock.  Or substitute 1 cup broth for 1 cup water.
