Leftover Turkey Casserole

Servings: 9 X13 casserole dish
Course: Chicken, Rice & Grains, Soups & Stews, Vegetables

Ingredients
  

  • 1 & 1/3 cups MINUTE rice
  • Asparagus or Green Beans FRESH , cooked till tender.
  • 1 can cheddar cheese soup
  • 1 & 1/2 cups of water… (and, a separate amount of water 3 tablespoons)
  • 1 chicken bouillon cube
  • 1/4 cup pimento strips OR 5 green stuffed olives
  • 2 cups of leftover cooked turkey ( you can substitute with cooked chicken)
  • almond slivers

Method
 

  1. in small bowl combine half a cup of the soup with the 3 tablespoons of water. Set aside.
  2. in a sauce pan dissolve the bouillon cube in the 1 & 1/2 cups of water. Add remaining soup to the mixture. Bring to a boil and add rice. Then turn off the burner.
  3. When rice is cooked, add turkey and pimentos.
  4. Heat through.
  5. Transfer turkey mixture to a 9X13 pan. (Or a dish that actually fits into your microwave.) Arrange vegetables lengthwise over top and pour the 1/2 cup reserved soup over veggies.
  6. Microwave till heated through. Garnish with almonds around the edge.
