No Peek Chicken

In November 2018, I found this newspaper clipping shoved in a drawer and forgotten…so I know it’s an old recipe. Then I made this post by putting the title in… and, yesterday while getting the grocery list ready, I pulled up the post to get the ingredients. To my surprise, I had a title. That was it. Just the title. … Yeah, senior moment or brain fart. Soooo, after locating the recipe this morning…. (and, yes, I felt so stupid)…. I decided to make this for dinner tonight. The recipe reminds me of a “set it and forget it” meal. Once you have prepared the casserole, you don’t need to do much else.

On a side note….and, to prove I’m human, last week I forgot to add the milk to the grocery list. (Yup, loving these senior moments/brain farts !!)

Anyway, enjoy! I added a side of vegetables with this casserole.

No Peek Chicken

Servings: 6-8

Ingredients
  

  • 1 box of Uncle Ben’s Long Grain and Wild Rice with Herbs
  • 1 can EACH of condensed Cream of Mushroom Soup and Cream of Celery Soup…. I make my own Cream Soup and you can obtain this recipe HERE
  • 1 soup can of Cold Water
  • 1 teaspoon Parsley Flakes
  • a dash of Curry Powder
  • 6 – 8 pieces of Chicken (I had 10 drumsticks, so that’s what I used)
  • 1 package of Onion Soup Mix….I make my own Dry Onion Soup Mix and you can obtain this recipe HERE
  • butter
  • tin foil

Method
 

  1. Butter the casserole baking dish lightly.
  2. In a bowl, mix together: Rice along with the herb packet that comes in the rice box and you may want to add only half of the herb packet… The rice was a bit salty in my opinion, Soups, Water, Parsley and Curry Powder. Stir until well blended.
  3. Pour rice mixture into the buttered casserole dish. Put drumsticks/chicken parts on top. Sprinkle the onion soup mix over the top of the chicken and rice. Also, you may not need to use the whole onion soup mix. I think the next time I make this, I will use about half of the onion soup mix packet.
  4. Seal the casserole with foil. Seal Well. Bake for 2 & 1/2 hours. Do nothing else. Dont open the oven. Dont lift up the foil. Just let it bake … and bake… and bake some more.
  5. Serve with your favorite side of vegetables.
