- Pie Ingredients:
- 3/4 cup Flour
- 1 cup Sugar
- 1/4 cup unsweetened Cocoa Powder
- 1 teaspoon Baking Powder
- 1/4 teaspoon Salt
- 1/2 cup butter, melted
- 2 Eggs, beaten
- 1 teaspoons Vanilla
- 1/4 cup Pecans, chopped and toasted (to toast pecans, pre-heat oven to 350° and bake for about 5 minutes. Check to make sure they don’t burn.
- 2 handfulls of Mini Marshmallows
- 9″ spring form pan (I don’t own one of these, so i just used a bit of parchment paper on the bottom and lightly butter the sides only.)
- extra butter, not melted
- Frosting Ingredients: 1/4 cup butter, melted, 1/4 cup cocoa powder
- 1/4 cup evaporated milk
- 1 cup powdered sugar
- PIE HOW TO:
- oven at 350° Butter your pan and set aside. In a bowl, whisk the following: flour, sugar, cocoa powder, baking powder & salt. Set aside. In another bowl, beat together: butter, eggs and vanilla. Then add this to the flour mixture. Stir in toasted pecans. Pour into prepared pan. Bake on middle shelf for 25-30 minutes or until tooth pick comes out clean. Sprinkle marshmallows on top and return to oven for a few minutes to melt the marshmallows.
- FROSTING HOW TO: In a bowl, mix ingredients with electric whisk until smooth. Spread over the hot marshmallows. Let cool completely. Cut and enjoy
