BLT Pasta Salad

Mmmmhmmm! Pasta And Bacon? Yep!! I thought I would just sneak in one more nice refreshing salad before the season changes from Summer into Fall. And, this recipe sounded like a winner. The recipe called for Apple Cider Vinegar. At first I was skeptical, but it seems to be perfect for this salad. Anyway, Enjoy !!!!

BLT Pasta Salad

Ingredients
  

  • 2 cups uncooked Farfalle Pasta ( AKA Bowtie Pasta)
  • 1 & 1/2 cups Tomatoes, chopped
  • 4 Cups chopped or torn Romaine Lettuce
  • 4 or more slices of bacon, cooked to crispy and chopped. (And yeah right…. just 4 slices??? I ended up using half a pound and it was soooo worth it !!)
  • 1/2 cup Red Onion, chopped
  • Dressing part: 1/4 cup EACH of Ranch Dressing, Sour Cream and Mayonnaise
  • 1/4 teaspoon fresh ground pepper
  • 1 tablespoon Apple Cider Vinegar

Method
 

  1. Cook pasta as directed on the box. Drain, and cool immediately with cold water. set aside… and let it keep draining in your drainer thingy.
  2. get a large bowl and put the onion, tomato and lettuce. Add cooked pasta. Toss and toss some more. ( I kept the bacon out of the salad until we were ready to eat. I didnt want it to get soggy)
  3. For the dressing: Get a small bowl, combine and toss over the salad.
  4. Chill till serving time.
