Kickin Chicken and Potats

  • 1 Pound boneless chicken breasts, cubed to 1-inch
  • 5-6 Medium Potatoes, cubed (1/2″) can be peeled or skins on (a variation on this potato would be to use the little red potatoes…however i have not tried this with the red potatoes….yet. May need to add around 7-9 since red potatoes are smaller. hmmmmm)
  • 1/6 Cup Olive Oil
  • 3/4 Teaspoon Salt
  • 1 Tablespoon & 1/2 Teaspoon black Pepper
  • 1 Tablespoon & 1/2 Teaspoon Paprika
  • 1 Tablespoon Garlic Powder
  • 1 Tablespoon Hot Sauce. (Like it HOT? add more)
  • 1 Cup of your favorite melted cheese, grated
  • 1/2 package fried up bacon (approximately 1/2 pound. Like Bacon? add more)
  • 1/2 Cup chopped green onion
  • cooking spray

Method
 

  1. Preheat oven to 500°. Spray a 9 X 13 baking dish with cooking spray (like Pam). In a large bowl combine olive oil, salt, pepper, paprika, garlic powder & hot sauce. Add potatoes. Mix till well coated. Cook 40-50 minutes or till taters are done. Put raw chicken in same bowl to scrape up any leftover spices. Remove potatoes & reduce oven heat to 400°. In a smaller bowl, combine cheese, onion and bacon. Top the potatoes with raw chicken. Then sprinkle the cheese/onion/bacon combo over the raw chicken. Bake an additional 15-20 minutes until chicken is done. Can be served with Ranch Dressing or additional Hot Sauce.
