Beef Stuffed Peppers

Beef Stuffed Peppers

Servings: 2-4

Ingredients
  

  • STUFFING
  • 1 pound hamburger
  • 4 medium peppers (green or red or yellow or any combo)
  • 3/4 cup onion, chopped
  • 1/4 cup uncooked rice
  • 3 tablespoons of ketchup, divided
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon pepper
  • SAUCE
  • 14 & 1/2 ounces of Italian style stewed tomatoes, undrained
  • 1 tablespoon ketchup
  • 1/2 teaspoon dried oregano

Method
 

  1. oven at 350°
  2. Cut tops off of the peppers & remove seeds. Set aside.
  3. STUFFING in large bowl combine: hamburger, onion, rice, 3 tablespoons ketchup, salt, 1/2 teaspoon oregano & pepper. mix well. Spoon into prepared peppers. Stand peppers in a 8X8 square pan. Use foil to prop up peppers if necessary.
  4. SAUCE in a smaller bowl, combine stewed tomatoes, 1 tablespoon ketchup & 1/2 teaspoon dried oregano. Pour over stuffed peppers. Cover dish tightly with tin foil.
  5. Bake 1 & 1/2 hours to medium done. (Pepper should be at least 160°
