Beef and Broccoli

Ingredients
  

  • about a 5 pound beef chuck roast, sliced into strips
  • about a cup of beef broth (I used a bit more)
  • 1/2 cup soy sauce
  • 1/3 cup brown sugar
  • 1 bell pepper of your choice, seeded and cut into strips
  • 1 tablespoon sesame oil
  • 2 large garlic cloves, minced
  • 2 tablespoons cornstarch
  • 4 tablespoons of crock pot juice after meat is cooked.
  • about 2 cups frozen broccoli florets. (I think I had about 3-4 cups in this recipe)
  • white rice, cooked

Method
 

  1. in crock pot, whisk together: beef broth, soy sauce, brown sugar, sesame oil and garlic. Place beef and bell pepper in crock pot. Toss to coat. Turn crockpot on low and cook for at least 6 hours…maybe more depending on thickness of your slices.
  2. When meat is cooked, in a small bowl, combine cornstarch and cooking liquid to create a slurry. Pour into crock pot and gently stir to combine. Add the frozen broccoli and cook on low for an additional 30 minutes.
  3. Serve with the cooked rice.
